Growing galangal in Hawaii requires great patience. From planting until the roots are mature, it takes more than a year before the galangal can be harvested. Harvesting galangal roots is also very difficult. Galangal must be dug out of the ground, rinsed, and all small roots must be cut off the large roots. Harvesting galangal is very challenging and time consuming.
